If you're looking for a way to impress your friends, family or housemates, but aren't really an avid baker, then look no further than these little alcoholic cupcakes !

Why tuck into a plain sugary cupcake, when you can enjoy one with the beloved ingredients of gin , and of course, tonic?

So, baking utensils at the ready, here is how you can make fuss-free gin and tonic cupcakes!

You don't need many ingredients to make these little cakes

Cake base

What you need

  • 75g butter
  • 75g caster sugar
  • 2 eggs
  • 75g flour
  • 50ml gin
  • 50ml tonic

Grab a bowl and a wooden spoon, mix together 75g of butter and 75g of caster sugar.

Once this is all mixed together, crack in two eggs, being careful not to break the shell into the ingredients, and then mix.

Mix in two eggs

Grab a sieve and add 75g of flour before mixing together.

Now for the bit you have been waiting for - gin time! Pour in 50ml of gin, mix, then add the same amount of tonic!

Want more gin? Well, doesn't everyone? Just make sure you add in more flour, so the mixture is not too runny.

Don't forget the key ingredient

Once your mixture is all blended well together, fill each cupcake cup 3/4 full in the baking tray, the mix should make around 12 cakes.

Next up, pop in the oven for 15 minutes at 180°.

While you're waiting, you'll need to get cracking on your icing mix.

Put your mix into cupcake cups

Get your priorities right though - make sure you mop up the leftover cake mix first - this is most certainly the best bit.

Make sure you haven't got to drive though, remember, there is gin in the mix!

Icing

What you need

  • 30g butter
  • 250g icing sugar
  • 25ml gin
  • Dash of tonic
  • 2 limes

Once you have licked the bowl clean, give it a quick wash, ready to prepare your icing mix.

Mix together 30g of butter and some of the icing sugar, before squeezing in the juice of half a lime.

Add in more icing sugar, up to 250g, as you go along.

Next - yes, it's that time again, more gin!

Pour in 25ml of gin, and a dash of tonic if you like, and mix together until your mix looks like this.

Your icing mix should look like this

Make sure you mix in all of the bits which will undoubtedly stick to the sides of the bowl.

Decoration

Leave the cupcakes to cool for 10 minutes and begin adding your icing into a piping bag.

We opted for a swirl decoration

To avoid getting into a mess, grab a pint glass and spread the piping bag around the rim, before adding in the icing with a spoon.

Once the cakes are cool, squeeze the mix onto the cakes in any style you wish - we opted for a stylish swirl.

The mix should make around 12 cakes

For the finishing touch, slice the lime into small sections and place on the top of the icing.

Enjoy!
