Mother's Day is just around the corner now, with the annual day to celebrate our mums falling on Sunday March 6 in 2016.

And what better way to treat your mum on her special day than by making her a delicious breakfast in bed?

Whether it's a stack of chocolate pancakes, or some yummy bacon, or even the standard toast and orange juice, she'll be grateful for your efforts, and it'll get her day off to a good start.

Here are some tasty breakfast recipes you can try yourself at home.

Blueberry and Chocolate Pancakes (makes six)

Ingredients

One ripe banana

150ml of milk

One teaspoon of vanilla extract

One mugful of plain flour

One teaspoon of baking powder

Half a teaspoon of cinnamon

A pinch of salt

A big handful of blueberries

A small handful of dark chocolate chips

One tablespoon of oil

Maple or golden syrup for drizzling

Method

1) Mash the banana really well and mix it with the milk and vanilla.

2) Mix the dry ingredients together well, then pour the banana mixture into the dry ingredients. Mix until just combined, then add the blueberries and chocolate chips.

3) Heat the oil in the pan until really hot, then blob the mixture into the pan. Heat until bubbles form and then flip, cooking until golden both sides.

4) Repeat this until the batter is used up, then stack the pancakes and drizzle with maple syrup.

Tesco: Breakfast Hash with Bacon and Eggs (serves four)

Ingredients

700g of potatoes, diced

Three tablespoons of rapeseed oil

One onion, sliced (200g)

150g of mushrooms, sliced

100g of spinach

150g of cherry tomatoes, halved

Four slices of lean back bacon

Four medium eggs, poached

Method

1) Boil the potatoes for 15-20 minutes until tender, drain and cool slightly.

2) Meanwhile, heat one tablespoon of oil in a frying pan and fry the onion for four minutes, add the mushrooms and fry for another three minutes. Add the spinach and tomatoes and cook for a further minute. Roughly mash the potato and mix into the onion mixture. Season.

3) Meanwhile, cook the bacon under a preheated grill for 4-5 minutes.

4) Divide the potato hash into four rounds. Heat the remaining oil in a large frying pan and fry the hash rounds for two minutes on each side.

5) Top with bacon and a poached egg, then serve.

ASDA: Triple Berry Compote with Porridge (serves five)

Ingredients

500g of mixed berries (such as blueberries, raspberries, blackberries), frozen or fresh

50g of caster sugar

One cinnamon stick, optional

Cooked porridge, to serve

Method

1) If using frozen fruit, put in a pan with four tablespoons of water and heat until thawed. Add the sugar and cinnamon. Cover and simmer for 10 minutes.

2) Or, if using fresh fruit, put it in a pan with six tablespoons of water and the cinnamon stick, cover and then simmer for three minutes. Add the sugar and stir gently until dissolved, then simmer for another eight minutes.

3) Remove the cinnamon stick. Put the compote in a jar or a bowl to cool. Store in the fridge.

4) Serve with porridge.

Tesco: Green Eggs and Ham Omelettes (serves four)

Ingredients

Eight medium free-range eggs

20g of unsalted butter

One 130g tub of fresh pesto

Two 120g packs of Wiltshire cured ham, chopped

One 250g pack of Edam slices, chopped

Fresh basil leaves for garnish (optional)

Method

1) Crack two eggs into a small bowl, add 30g of pesto, a little salt and pepper for seasoning and mix thoroughly with a fork.

2) On a medium heat, add 5g of butter to a small 20cm nonstick frying pan. Once melted add the eggs and using a spatula move the eggs around to slightly scramble. Allow to settle so that the bottom of the pan is covered completely.

3) Add two slices of ham and two slices of cheese to the pan. Turn the heat to low and allow to cook for 1-2 minutes until the eggs are cooked.

4) Gently slide the omelette onto a plate and fold over in half. Give the pan a wipe with some kitchen paper and repeat the process again to cook the next omelette.

Aldi: French Toast with Caramelised Apple (serves four)

Ingredients

Eight slices of brioche loaf

Four red eating apples

125g of blueberries

50g of demerara sugar

60ml of smooth orange juice

Three large eggs

100ml of single cream

80g of butter

Method

1) Core the apples and cut into thick slices.

2) Melt 40g butter in a large frying pan. Add the apples and cook until golden brown. Add 25g sugar and the orange juice, cook for 2-3 minutes until the apples are soft.

3) Beat the eggs with the remaining sugar and cream.

4) Dip the slices of brioche in the egg mix, fry in the remaining butter until golden on both sides.

5) Serve topped with the apples and blueberries.
