MANAGER?
Libby John. I’ve been working here for 15 months and managing pubs for 11 years. Establishments including The Roebuck in
Chiswick and a Wetherspoons are my former haunts. I have always been in this industry.

PUBS ARE STRUGGLING IN THE ECONOMIC DOWNTURN. HOW ARE YOU COPING?
Fantastically. We are doing very well. Being voted Time Out’s Gastro Pub of the Year a few years ago has helped.

WHAT’S YOUR BEST-SELLING BEVERAGE?
Our white wines sell well. Doom Bar is also very popular.

HOW MUCH IS THE PRICE OF A PINT?
£3.70 for Doom Bar.

WHAT MAKES YOU UNIQUE?
We have consistently high standards and well-trained staff who have been in the trade for a while, customer service is important to us. Financially we are also very well run.

HOW WOULD YOU DESCRIBE YOUR AVERAGE CUSTOMER?
During the week we get a lot of young professionals. On the weekend we get designers, locals, all sorts.

WHAT FOOD DO YOU SERVE?
Traditional English gastro and seasonal dishes. Everything is cooked on site using fresh ingredients. We have five chefs who are all very skilled.

HISTORICAL FACT ABOUT THE PUB?
The pub used to brew its own beer – that was years ago when it was called The Saloon. The building has hosted a pub for over 100 years and has even featured in a 1940s film, although I’m not sure which one.
