The head chef at Stockley Academy has scooped gold and silver medals in a cookery contest.

Dean Wentworth, who works for the catering service Cucina at the school in Park View Road, took top honours at the Wessex Salon Culinaire organised by the Craft Guild of Chefs. He was up against tops chefs from some of the UK’s poshes hotels and restaurants.

Dean served up Pan Roasted Pork Tenderloin rolled in herbs, mustard and Parma Ham served with Champ Potatoes, Heritage Carrot, Wilted Spinach and an Aspall cider sauce to take the gold medal.

Sous Vide Roasted Duck breast with a Duck Offal Faggot, Confit Duck and Jersey Royal Terrine, finished with a Green Vegetable Fricasée – which took two days to prepare – netted him silver.

“I am really excited about this,” said Dean.

“I loved every part of what I did in this competition, and it is amazing to win against such high class competition.”
